Chef Franco was born and raised in Italy. He came from a family with close ties to gourmet food. His father is president of the Escoffier of Italy, the most esteemed chef organization in Europe, where Franco earned his official designation. Food is his passion.
Franco’s lovely wife and manager Sharon, was born and raised in Israel. She came to America after finishing her military service. They met in Manhattan and … fell in love at first sight.
Sharon and Franco reside in Springfield with their two sons; Daniel & Nico, whom the restaurant is named after.
The restaurant was opened in 2012 with the idea that food should be prepared and served with love.
Paying careful attention to the use of the freshest ingredients, local markets are the first stop each morning.
Franco duplicates many authentic traditional Ligurian recipes that have been handed down through his family for generations.
